“Osti Opposti”, Tommaso and Dante, present an educational video in search of true Tuscan and Chianti cuisine in the heart of Panzano in Chianti.
We begin by shopping in Greve in Chianti. We buy the bread (and some “fritelle”) under the arches of the town center and some Parmigiano Reggiano from the stand in the Piazza.
Near the monument dedicated to Giovanni da Verrazzano, we stop at the fruit and vegetable stand to buy the holy trinity of meat sauce…”carrots, celery, and red onion”.
For the ground beef for the sauce, we pay a visit to “Doddi” (the Checcucci Butcher Shop) in Panzano alto. We then take a pause; bread, prosciutto and pancetta accompanied by a good glass of wine.
Next, the kitchen and paccheri pasta from Gragnano, newly arrived from Naples. The sauce is cooked on a wood burning stove. While we cook, we eat, we drink, we snack and prepare some raw vegetables to be dipped in olive oil.
After sautéing the “trinity”, we add the ground beef and the meat of two sausages. Then we add tomatoes, red wine and salt.
We cook, we set the table, we sauté the pasta together with the sauce, and we sprinkle on some grated Parmesan.
