At Casa Chianti Classico (Radda in Chianti) the menu is always created with the utmost care, and this is why the cook Irene Berretti and all the staff were ready to face up to this recent torrid heat wave with a perfect choice of dishes.

We went to browse in the kitchen and were shown around by the chef, Paola Valenti and Nicola Bochicchio (kitchen consultant) to discover some of their many culinary offerings.

First a dish whose simplicity matches its surprising flavours: anchovies with green sauce, peppers and velvety cow’s cheese.

This dish fully respects the philosophy of the restaurant with its simplicity and quality of products.

Then we were shown the preparation of a truly succulent dish: artisan bresaola, salad, green apple and Barbabecco flakes (an exquisite “pecorino di Pienza” cheese). A perfect combination of substance and lightness.

Finally a dessert: the fantastic Pistocchi cake accompanied by fruit sorbet and a yoghurt mousse.

You can savour all their dishes along with some some carefully chosen red wine, and also taste their Chianti Classico DOP olive oils, which are the pride of director Giuseppe Pollio and are loved by many customers.

Under the cool vaults of the Convent of Radda in Chianti, you couldn’t ask for more.
