Where the owners of the estate of Tenuta di Spannocchia, Francesca and Randall and the norcino Riccio, will talk about the company educational project and their Cinta Senese breeding.
This swine breed, with extraordinary organoleptic and dietary properties, has been present in the Sienese countryside since the Middle Ages, as evidenced by thepicture by Ambrogio Lorenzetti.

Aperitif in the cloister with knife-cured ham and toasted bread with rosemary, lard cream with aromatic herbs and Chianti bubbles.
Appetizer of Cinta Senese cured meats, crust with fegatelli and homemade gardener. Pappardelle with ancient grains Pastasciano with ragù di cinta.
Roast arista with seasonal herb and vegetable sauce. Ricotta cheese from the Crete Senesi and fresh strawberries.
Wine: wine tastings offered and presented by the Castello di Meleto, Gaiole in Chianti.
