This is the second evening on the theme of ‘matching’ at Vitique, that organises a series of mouthwatering events during which the resident Chef Riccardo Vivarelli hosts other highly rated chefs in his kitchen.
On Tuesday, October 2nd the chef Giuseppe Mancino, from the famed Piccolo Principe of Viareggio, will join Vivarelli in a Michelin-starred tasting itinerary, paired with the great wines of the Santa Margherita Gruppo Vinicolo.
This is the menu: Scallop, carrot mayonnaise, pistachio and guanciale (Vitique); Tuscan Smoked Sushi, ‘battuta del Masoni’ tartare, fried bread, seasonal truffle by Selezione Savini, pecorino cheese and bitter herbs (Il Piccolo Principe).
“Goose liver Milanese”, spices, onion and coconut sauce, curly leaf salad and Saba (Il Piccolo Principe); Risotto, black cabbage, buffalo blue cheese, beetroot and raw cod (Vitique).
Rice flour ravioli, crab, sea snails, black garlic, seaweed powder and yellow tomato (Il Piccolo Principe); Turbot in potato crust, artichokes and cacciucco sauce (Vitique).
Carrot, cinnamon and yoghurt mousse (Il Piccolo Principe); mini pastries (Il Piccolo Principe)
The evenings starts at 8pm with the welcome aperitif; at 8.30pm the tasting dinner starts. Price: 80 euros per person, wines not included.
